Yellow Cornmeal Buttermilk Pancakes

I made these cornmeal pancakes for my family this morning! I got the recipe from my Mom and they are the BEST pancakes ever! She used to make them for us growing up and mmmmm they are delicous!! I'd take these over regular pancakes any day of the week!

1 C - buttermilk (or water plus powdered buttermilk)
1 - egg
3 T - melted butter
*Stir the above 3 ingredients together, set aside.

1/2 C - flour
1/4 C - cornmeal
1/2 t - salt
1 t - baking soda
*Stir the above 4 ingredients together. Then blend everything together until just moistened, leaving lumps! Makes about 12 small pancakes.

These are very very delicate and small pancakes. You will want to pour them onto the greased griddle very slooow. They cook quick and like I said, are very delicate! I was much better at making them my 2nd time around! They are so good with syrup or strawberry jam! Grace will eat 2, while Kyle and I eat around 4. Then with my little family, that leaves 1 for Hatchet and Chloe .... if they are lucky!!!!
